Low-Sugar, High-Protein Blondies

Finding a snack that’s both satisfying and supportive of your health goals can feel tricky. That’s why I love these blondies: they’re simple, nourishing, and incredibly easy to make. With just five ingredients, you’ll have a batch of soft, protein-packed squares ready in under 30 minutes.

Each serving delivers about 10 grams of protein and only 3 grams of carbs, making them a smart option for steady energy without the sugar crash. They also freeze well, so you can keep extras on hand for busy days.


Ingredients

  • 1 cup nut butter of choice (almond is our favorite)

  • 1 cup vanilla protein powder (I recommend Designs for Health beef protein isolate, available through my Fullscript dispensary)

  • 1 cup eggs (about 5)

  • 1 tablespoon vanilla extract

  • 1 teaspoon baking soda


Instructions

  1. Preheat oven to 350°F. Line an 8x8 baking dish with parchment paper.

  2. In a large bowl, combine all ingredients and mix until smooth.

  3. Pour batter into the prepared dish and spread evenly.

  4. Bake for 20–30 minutes, or until the center is set.

  5. Let cool before slicing into squares.


Tips to Customize

  • Stir in dark chocolate chips for a classic twist.

  • Add cinnamon for warmth and spice.

  • Mix in dried fruit for a touch of natural sweetness.
